Hello,
on my website Link: http://www.peterurban.at I use an album of albums
in the case my harddisc crashes I would have to do a lot of work do to remake it.

On my Pc I am using Ubuntu 16.04 LTS. I am using the skin Tiger.

Which files in which directory do I have to save on another datacarrier to easy recover it in case my harddisc crashes?

That's not an "album of albums." It's simply a single jAlbum project that has folders.

You need to back up the entire project folder on your PC - everything in /home/peter/My Albums/klick mich!

It appears that you have jAlbum set to its default mode, in which the original image files are copied into the project (rather than just being linked), so the project folder should contain everything needed to recreate the album.
