Help for Projector Skin

Hello, I can't find the Menu for the different Transitions in this skin. eg. Book, cube.
What are the steps to go to the correct Menu where I can change these effects.

My Jalbum is all in German, can I change the language overall in English.

For English, select Tools->Preferences, then select "English" (Optionen - Hauptseite - Sprache) from the languages drop list.
