jalbum tiger video keywords: i put them in and they disappeared

This is my issue and I can't find a fix with substantial searching:
I put keywords in and hit save and go on to the next video in Explore mode. I also make changes to the Title. When I go back both are gone, ie the changes and the keywords.
?

First, what version of jAlbum are you using?
ETA: From your posted albums, it looks like jAlbum 37, so....
There is no need to explicitly "save" these entries. They're not project settings (which do have to be saved), but are things that apply to single objects, so they're automatically saved as soon as you move to another object.
Under Settings > Advanced > Metadata, try checking xmp - the jAlbum box is checked by default, and that can't be undone. It should work either way, but just to be sure....

xmp is checked
I put the keywords in, go to the next video and go back and they are gone

Very mysterious. I just did a quick test, and the keywords are working properly.
Are you entering the keywords below the thumbnails in the Explore View, or are you opening the videos for editing and entering them in the Description panel on the right?
And, as always, are you getting any console errors? If there are any, you'll see a warning triangle at lower right. Then hit F7 to open the console, and copy and paste whatever error is showing up there.

Yes, entering into the Description panel. I also put in a Comment and those stick.
I am trying entering them in the file's Properties and seeing how that goes.

For now, stick to entering your keywords under the thumbnails in the Explore view. On the upper right, tell jAlbum to show you the Keywords, as opposed to Titles or Comments.

There you go
I do wonder what exactly "keywords" do from the JAlbum side of things. They don't get into the Windows File Properties and they don't seem to show up when one "inspects" the created and uploaded webpage.
I do invest time in creating "keyword-rich" comments which get loaded up as Alt text.

Oh please, please stay away from File Explorer properties. Windows has its own weird rules for where things get stored. Sometimes, it will store an attribute in more than one place, thus muddying the waters even further.
The catch is that, unlike some of the EXIF fields, there is no standard definition of what "keyword metadata" are. Each app does its own thing.
What an album actually does with the keywords is skin-dependent. Some just ignore them. Others make them available for use as image captions. Others include them in their "search" capabilities.
Happily, Google pretty much ignores them these days. Keywords were a target for all sorts of "make my page pop up high on the results list" manipulation. Google put a stop to that by no longer paying attention to them.
Using "keyword-rich" comment content is much more likely to produce results.
