This all sounds like a return to the age-old question, "How do I stop people from stealing my images?"
The AI bots, like the more traditional search bots, can simply ignore a robots.txt file. An "are you a human" test can be bypassed by an AI bot that has learned how to mimic the behavior of a human visitor. A test like that ends up not stopping the bots, but also annoying the daylights out of real visitors, who get tired of clicking on squares with motorcycles in them.
The only ways to protect your content are to deface it badly with heavy watermarks, to put your site behind password protection, or not to put your content on the internet in the first place.
And if Google Images has already indexed your site, the images are already "out there."
I think this train has sailed.
